Yeasts are eukaryotic microorganisms that are any species of fungus growing primarily in a unicellular form and reproducing via budding or fission. They originated hundreds of millions of years ago, with at least 1,500 species recognized, constituting about 1% of all described fungal species. Yeasts are significant for their role in fermentation, baking, alcoholic beverage production, and as model organisms in cell biology research.

Lore & Background
The word yeast comes from Old English 'gist' and the Indo-European root *yes-, meaning 'boil', 'foam', or 'bubble'. Yeast microbes are probably one of the earliest domesticated organisms. Archaeological evidence includes grinding stones and baking chambers for yeast-raised bread in Egyptian ruins, and drawings of 4,000-year-old bakeries and breweries. Vessels from Israel dating to around 5,000, 3,000, and 2,500 years ago contained yeast colonies, providing direct biological evidence of early yeast use.
In 1680, Dutch naturalist Anton van Leeuwenhoek first microscopically observed yeast but did not consider them living organisms. Theodor Schwann recognized them as fungi in 1837. In 1857 and 1860, Louis Pasteur published key experiments on fermentation, showing that bubbling oxygen into yeast broth increased cell growth but inhibited fermentation—an effect later named the 'Pasteur effect' by others—and proved alcoholic fermentation was conducted by living yeasts, not a chemical catalyst. By the early 20th century, two brewing strains were identified: Saccharomyces cerevisiae (top-fermenting) and S. pastorianus (bottom-fermenting). S. pastorianus was originally described by Max Reess in 1870, and the synonym Saccharomyces carlsbergensis was described by Emil Christian Hansen in 1883. Commercial production of pressed yeast blocks is generally attributed to the 1840s or later, not 1825. The filter press in 1867 enhanced industrial production, and in 1872 Baron Max de Springer created granulated yeast from beetroot molasses. In the United States, commercial yeast was marketed at the Centennial Exposition in 1876 by Charles L. Fleischmann.
